Urasenke Tea instructor Wendy Soen Lin, who has been “studying tea” for almost two decades, is fighting to keep matcha’s traditional way of creation alive.
Urasenke is one of the main schools of Japanese tea ceremony — practised using a yellow bamboo whisk.
“I started studying tea without really knowing what it is. Later, I had a chance to, my friend gave me a book that my grandmaster wrote about tea, and it really aligned with my philosophy because tea is … about life,” said Wendy, who runs lessons in the inner-Sydney suburb of Surry Hills.
Wendy has been teaching traditional tea ceremonies in Sydney for eight years.
She holds the ceremonies inside the Simply Native store in Surry Hills, owned by Yukino Matsumoto, who studies tea through Wendy.

“I started learning tea back in Japan around 10 years ago. And then after I moved to Sydney, I found Wendy,” Yukino said.
“She was a great teacher, so I’ve been studying under her ever since.”
Wendy said she and Yukino had found a way to “synergise” their businesses — both of which they say aim to showcase traditional Japanese culture in Western society.
The history of matcha: ‘Way of tea’
Traditional Japanese tea ceremonies are known as Chanoyu or Chadō which means “the way of tea”.
The ceremony has its roots in Zen Buddhism, intertwining meditation with the act of making tea.
Traditional tea drinking was first practised in Japan during the Kamakura period (1192–1333) after monks who went to China brought back tea leaves.
“Tea was very scarce in Japan,” Wendy said.
“Tea started in China and spread all around the world about a thousand years ago.
“That’s where a lot of cultural exchanges between Japan and China happened.
“Lots of Japanese scholars and monks went to China to get information.”
Monks found people drinking tea in Chinese temples and brought the practice back to Japan.

“Drinking tea goes hand-in-hand with meditation because monks at the temple would do long hours of meditation,” Wendy said.
“Your mind is clear, so you’re in a meditative state making the best of tea. And then you’re connected by mind to your guests.”
Monks would also use green tea as a medicinal ingredient, cooked with sake and other herbs.
Over time, the main purpose of tea ceremonies evolved to focus on hospitality and drinking tea together became a popular pastime for friends and family.
“It’s the hospitality; gathering of friends, sharing philosophy, sharing thoughts, sharing utensils, that kind of thing,” Wendy said.
The tea ceremony experience
The adoption of matcha in ‘influencer culture’ has risked the tea’s rich history and tradition.
But stepping into Wendy’s tearoom shows there are still places that celebrate and honour the drink’s origins outside of Japan.
In the tearoom, every detail is carefully crafted to pay respect to the ancient tradition of tea making.
At the entrance sits a sign with the name of the room: “Wasei-an” — which translates to “the sound of peace”.
The name came from a scroll inside the tearoom that reads “drinking tea brings the sound of peace”.
The scroll was written and handed to Wendy by Hounsai Daisosho-sam — the 15th generation grand tea master of Urasenke.

Inside the tearoom, we are asked to take our shoes off before stepping onto the tatami — soft mats used as flooring in traditional Japanese-style rooms.
Brightly lit and with the sunlight streaming in through the sliding doors, the room had a relaxing, meditative atmosphere.
After entering, Wendy instructs us to sit on the centre of the mat, directly facing the hot water pot.
When asking how to sit for the ceremony, Wendy warns the traditional way — sitting on our knees and resting on the heels of our feet — was going to be painful.
“It’s going to be really hard,” Wendy said, offering a pillow for support.
The next step of the tea ceremony has to do with the mat where we’re told to sit behind 16 lines of the tatami.
“There are a lot of rules,” Wendy joked.

Wendy explained it was essential to eat before a tea ceremony as matcha has high levels of caffeine and an empty stomach is not advised.
Traditional tea ceremonies in Japan start with a meal.
“Actually, you have a whole lunch,” Wendy said.
After sweetening our palettes, the tea ceremony begins with a bow to each other.
In Japanese, Wendy then says: “Let me serve you a bowl of tea.”
With delicate hands, Wendy brings out the utensils —the matcha powder, a ceramic bowl, a bamboo teaspoon, whisk and wooden water ladle.

She then wipes the utensils one by one with a red cloth to “purify” each tool.
Cleaning of the tools is done once before the ceremony and once after the ceremony, Yukino said.
“She’s (cleaning) in front of you so, that you feel all the utensils are carefully prepared and purified,” Yukino added.
Wendy then embarks on the step familiar to those who’ve seen tea ceremonies before as she gently scoops two teaspoons of powder and puts it into the ceramic bowl.
Taking the water ladle, she scoops hot water from the pot and into the bowl.
Wendy then takes the bamboo whisk and whisks the matcha in an ‘M’ motion until bubbles formed and its colour change.

In less than a minute, the matcha turned from a thin, dark green liquid to a frothy, light pear-coloured substance.
The drink has been made the traditional way — only matcha powder and hot water. Drinking matcha with milk, flavouring and fruit purée is not traditional.
Yukino then grabs the matcha bowl and places it in front me.
She instructs me to take the bowl with my right hand and place it in between us.
We both bow whilst I say “osakini”: a polite way to say “let me drink first”.
I place the bowl back in front of me then bow to Wendy and say, in Japanese: “Let me enjoy your bowl of tea”.

As another sign of respect, the bowl must be turned twice clockwise before drinking.
“We don’t drink from the best side of the tea bowl. We turn it twice so the best side of the bowl is not in front of us,” Wendy said.
Then the best part — I drink the matcha.

Silence fills the room as Wendy and Yukino watch me take a sip — an intimate yet intimidating situation to align with the ceremony’s depth of tradition.
With only hot water and premium matcha powder, the drink was smooth and refreshing, not bitter at all.
Wendy then advises me to slurp the last sip so I can catch all the foam residue left at the bottom of the bowl.
After the last slurp, I was instructed to use my right thumb and index finger to wipe the spot where I sipped from.
Once cleaned, I rotated the bowl back twice anticlockwise so that the best side was again facing me.
I placed the bowl down onto the mat before bowing towards it to “appreciate” the art on the bowl, Yukino explained.

Wendy then took my bowl and started the cleaning process.
She rinsed the bowl by whisking hot water inside and pouring it into a separate bowl.
Wendy then wiped the teaspoon and added more water to the hot pot, as Wendy was to repeat the whole process again for Yukino’s tea.
She took all the utensils to the back and came out with a new bowl for Yukino.
‘Every step is predetermined. There’s no extra step and there’s no less step’
The tea ceremony educated me culturally, throwing me into a different world without even leaving the country.
Every step in the process gave me a deeper understanding of matcha and helped me understand its roots and cultural significance to Japan.
As matcha continues to expand into Western mainstream culture, traditional tea masters explained why it’s so important to keep tradition alive.
“What you don’t realise with matcha, tea and the ceremony is it maintains a whole field of artisans behind us. That is keeping their arts alive,” Wendy said.
“So if we take out tea, this tradition, if we stop continuing it, a lot of artisans will be out of work.”
