The US imports over 2000 tons of this bright green powder from Japan a year. This specific powder is the highest quality and most expensive version of matcha, known as ceremonial grade. As the matcha frenzy reaches new heights in the US, more Western consumers are opting for this type of matcha over less expensive versions or matcha grown outside Japan, but with Japanese farmers struggling to keep up. With demand matcha shortages around the world and prices soaring to new records, picky matcha drinkers might actually be making the problem worse. We do have so crazy matcha connoisseurs I come in, but these labels may not be as definitive as we think. Anyone can label anything as ceremonial grade and use it as a marketing term. So are people in the US drinking matcha all wrong? And is that the only reason why matcha is more expensive than ever? Matcha drinkers in the US typically think about the tea in two quality based categories, culinary grade, the lower quality version and ceremonial grade, the higher quality one. But in Japan, the traditional classifications were completely different based on when the T was served during a Japanese tea ceremony known as chanoyu. Gouache or thick tea was served at the beginning, and usucha or thin tea would come at the end. For koicha, like a thick soup or of like melted ice cream would be a good way to describe the consistency. It’s really viscous. Rebecca Corbett has been studying and practicing Chanoyu for over 20 years. Because of that viscosity and there’s so much tea in there, you want it to be the highest quality blend that you can get. For usucha, practitioners whisked the matcha powder with more water, creating a lighter, frothier drink. We can think of the thin tea portion of a tea gathering as kind of the most informal and relaxed part at the at the end of the tea gathering. Ceremonial grade matcha is typically priced higher than culinary grade matcha, costing anywhere from 20 to over $50 per oz, while culinary grade matcha is typically under $20 per oz. Tea made from Camellia sinensis is among the most widely consumed beverages worldwide, with black and green teas accounting for the majority of production. Modern research has focused on identifying the active compounds that contribute to these effects, particularly tea polyphenols, mainly catechins in green tea and theaflavins and thearubigins in black tea.
Green tea is minimally fermented, preserving high levels of catechins, while black tea undergoes extensive oxidation that converts catechins into complex polyphenols. Caffeine and the amino acid theanine also contribute to tea’s physiological actions.
Large cohort studies have linked tea consumption to lower cardiovascular mortality, a reduced risk of certain cancers, and a decreased incidence of type 2 diabetes. Laboratory studies provide mechanisms related to antioxidant activity, improved lipid metabolism, and modulation of signaling pathways. However, translating findings from cell and animal studies to humans is challenging due to differences in bioavailability, dosage, and physiology.

Meta-analyses also find a clear protective association, with the strongest effects observed in adults aged 50 to 69 years. Theanine, a unique component of tea, may contribute to stress-reduction and neurocalming effects, as well as its ability to cross the blood–brain barrier.
Research indicates that catechin-rich extracts can help maintain or increase muscle mass and strength, especially in older adults or individuals with sarcopenia. Human trials have shown improved grip strength and muscle function after supplementation, while animal studies have demonstrated protective effects against disuse-induced muscle loss.
Green tea consumption is linked to lower uric acid levels, with stronger associations observed in men. Small experimental studies have shown an enhanced excretion of uric acid following the intake of tea or catechins. Tea polyphenols also reduce inflammatory markers and improve markers of oxidative stress, including in individuals with hypertension or chronic kidney disease.
Tea catechins inhibit a wide range of bacteria and viruses. In the oral cavity, catechins can reduce the growth of cariogenic bacteria and improve oral health. Some demonstrate antiviral effects against hepatitis viruses, influenza, severe acute respiratory syndrome coronavirus 2 (SARS-CoV-2), and human papillomavirus (HPV), mainly by blocking viral entry processes. However, most antiviral studies are in vitro and cannot be directly extrapolated to humans.
Although green tea carries the strongest evidence base, Oolong, white, dark, and yellow teas also show potential benefits. Animal studies comparing teas made from the same leaf batches suggest Oolong tea may outperform others in weight control, while white tea may be most effective for lipid reduction. Still, these findings cannot be reliably generalized to humans.
Bottled or bubble teas pose health concerns due to the addition of sugars, sweeteners, and preservatives, which may counteract their natural benefits. Processing and storage also reduce catechin content compared with traditional brewing.

I love green tea and coffee. Every morning, I drink at least one cup of each. Numerous studies show that both hot beverages are good for health. A British long-term study also examined whether the consumption of tea and coffee is related to mortality rates and whether the combination of the two drinks has an independent association with mortality risk.
What was studied? A British long-term study investigated whether daily consumption of coffee and green or black tea is associated with the likelihood of premature death.1 Data from more than 498,000 participants aged between 37 and 73 were analyzed. They were observed over an average period of about twelve years.
At the beginning of the study period, participants reported how much coffee and tea they drank daily. Overall deaths, as well as those from cardiovascular, respiratory, and digestive system diseases, were recorded.
Also interesting: What is in coffee and how does the hot beverage affect health?
Results: The lowest likelihood of premature death was observed in individuals who drank about one cup of coffee or three cups of tea daily. The difference was particularly noticeable with a combination of both beverages. Those who drank moderate amounts of coffee (less than two cups) and two to four cups of tea per day had a 22 percent lower mortality rate than those who consumed neither coffee nor tea.
For deaths from cardiovascular diseases, the difference was 24 percent, and for respiratory diseases, it was 31 percent. The most significant difference was in diseases of the digestive system, such as the esophagus, intestines, liver, pancreas, and bile ducts. Here, the mortality rate was 58 percent lower when study participants also drank at least five cups of tea daily.
Significance: The results show a connection between moderate consumption of coffee and tea and a lower mortality rate. The association was particularly noticeable in deaths from digestive system diseases. Whether coffee and tea actually have a direct health benefit needs to be examined in further studies.
